As I was growing up, I would often see my parents and other relatives asking friends or other members of the family who will be going out of the country if they could send something for friends and relatives residing abroad. This made me believe that such practice is part of the Filipino culture...that is caring and thinking of our loved ones even though they are miles away.
On Thursday, April 8, my cousin together with her daughter and grandchildren will be leaving for Dubai to visit her two other children, her brother and her sister who are all working in the said country. As usual, my mother asked my cousin if she could send something for my other cousins. With my cousin's OK, my mother placed an order for 5 boxes of Pastillas de Leche a few weeks ago, which my husband and I picked up this afternoon in Malolos, Bulacan.
If you want to try this yummy Pastillas de Leche from pure Carabao's milk, here's the recipe that I got:
Materials:
* fresh carabao’s milk
* sugar
* pan and ladle
* cup
* bondpaper or Japanese paper
* heated corn starch or flour
Procedure:
1. Heat the pan and pour one liter of fresh carabao’s milk.
2. Add 1-1/2 cup of sugar
3. Bring the milk to a boil and stir till it thickens
4. Then roll on a clean, dry board sprinkled with heater corn starch or flour and cut into the desired size.
5. Wrap the pastillas in bond paper or Japanese paper.
The Pastillas de Leche that we have been getting are really special and a lot creamier compared to those that we normally get in grocery stores. In fact, this is what we have been sending our friends and relatives for years and they all love it! Why? Because it is home-made and they are made from pure Carabao's milk. In fact, we have to order 2 weeks in advance because they still have to get enough supply of Carabao's milk for all the orders that they have been getting. The commercial type of Pastillas de Leche, on the other hand, uses powdered milk and condensed milk instead of pure Carabao's milk and no cooking is involved.

Thanks for the recipe, I love pastillas! But I haven't tried carabao's milk. Can I substitute it for commercial fresh milk?
I love pastillas, the problem is where will I get carabao milk? :(
@ Gene: Hi! You can substitute Carabao's milk with powdered milk. and there are recipes that can be found in the net using powdered milk.
@ Josie: since we're in Bulacan, carabao's milk are sold in our local market very early in the morning. You can find it in provinces where farming is the main source of livelihood. :)
